Vineyards situation
The village of Santenay is located in the southern part of the Côte de Beaune, just after Chassagne Montrachet.
Characteristics
Calcareous and clay soil with more limestone in the higher part of the village where the "Passe Temps" is situated, bordering « Les Gravières ». Quality is very similar. South-East exposure. Well drained and light soil.
Wine making
Fermentation takes place in tanks during 3-4 weeks, after which the wine is aged in barrel for 12 months before being bottled.
Winemaker's comments / Gastronomy
The Santenay 1er Cru « Passe Temps » develops typical Pinot noir aromas (red fruits) as well as flowery notes and chestnut. Well structured, with good tannins, it is a vibrating wine. It will evolve harmoniously during several years.
It is an excellent match for roasts, grilled or marinated red meat, game and traditional cheeses (medium taste).
Preservation
It will age well for 5 to 10 years in good conditions of conservation and temperature.
